Breakfast salad

20130302-081652.jpgSummer continues on, despite the fact it is now March and “officially” autumn.

Do you feel the need to start off your day with some light when you wake up already sweating? Or perhaps you know you have a day ahead filled with less than optimal eating – work lunch, dinner with friends? How about a breakfast salad? Load up on vegies early!

I have some leftover roast vegies in the fridge and needed something nutritious before yoga. Very quick to prepare too.

Moving away from traditional “breakfast foods” for breakfast has been an interesting shift for me. Talking to people from other cultures, Westerners seems to be the only cultures with specific breakfast foods. Why restrict ourselves to toast and cereal?

Breakfast salad with sardines

Serves one

Ingredients

  • sardines, tin in olive oil
  • roast pumpkin
  • tomato
  • onion, roast
  • lettuce, big handful
  • spinach leaves, handful
  • parsley, handful
  • white wine vinegar
  • olive oil
  • salt & pepper

Directions

  • Put all ingredients on a plate
  • Drizzle over vinegar and oil
  • Add salt and pepper
  • Eat

Add other stuff

A breakfast salad could be made of anything! Only limited by your imagination and what’s in your fridge.

  • breakfast type ingredients; bacon, boiled eggs, kippers
  • any leftover cooked/roasted vegetables
  • avocado, of course!
  • salad vegetable; cucumber, carrot

Do you eat only “breakfast foods” for breakfast?
